Most American charcuterie is industrial. It's fermented fast with added sugar and fast acting cultures. It's sliced thin to disguise mediocre quality. Salumi Chicago doesn't make that.
We ferment slowly using the natural grape must in wine — the way Italian salumieri have done it for generations. We bloom our curing rooms with the same molds Greg worked with in Parma. Most of our salami is still hand-tied. The result is a clean, complex flavor that doesn't taste like anything else on the American market.
