Our artisan made salumi utilizes heritage pork, trapani sicilian sea salt, telicherry black pepper and cleto chiarli lambrusco (with the exception of barolo red wine in our barolo salami).
Our wagyu beef comes from Texas. The beef actually arrives to us Halal certified. However, we are unable to certify our beef salumi Halal certified since our ingredients involve wine and we are not a Halal certified facility.
Our duck comes from Hudson Valley Duck Farm. It is raised cage free in open barns and on a vegetarian grain fed diet. They do not utilize antibiotics or growth hormones.
