A vacuum sealer would be the best way to store our Bresaola. If you do not have a vacuum sealer, you can wrap it tight with plastic wrap. Pro-tip: take a paper towel, spray it with white wine, wrap the Bresaola in the paper towel and then rewrap the Bresaola in plastic wrap or a vacuum pouch. This will help to keep the Bresaola fresh.
I’m in the food service industry. I have had the opportunity to have bresaola from different providers. Salami Chicago has , by far, the best bresaola I ever had. You have to try this. I will continue to purchase this from them.
This was so delicious! I love bresaola and kind of wish I didn't put this on my charcuterie board to share! LOL It piles up beautifully when you separate the layers and make it into a nice stack.
