We recommend storing sliced portions covered, and in the fridge. Since our salami is shelf stable, you may choose whether to store it on the counter or covered in the refrigerator. If you choose to refrigerate your salami, please bring the salami to room temperature prior to consumption. Furthermore, please note that the refrigerator will also alter the salami’s texture and flavor over an extended storage timeframe.
Grateful for the clean and tasty ingredients. Wondering how it would taste if it fermented longer?—maybe the Unami would develop a richer-deeper flavor and drier meaty structure which is my preference. It was very good on homemade pizzas. Best wishes!
Excellent salami like from old Italy.
Absolutely OUTSTANDING taste! ! ! BUT I had the devil of a time removing the outer casing while leaving nice slices. Once I had the outer casing removed I had a couple of nice slices but quite a few small pieces. For some reason the outer casing would NOT peel off!
